Braising Essentials Cooking Class at Il Fiorello

LOW & SLOW: LEARN BRAISING ESSENTIALS AT IL FIORELLO

Il Fiorello Olive Oil Company will hosts a Braising Essentials class from 3:00 to 6:00 p.m. on Sunday, February 9 at its teaching kitchen in Fairfield, California.

Chef Marvin Martin will demonstrate that braising techniques used in fine dining restaurants can be used in the home kitchen. Braising, the art of cooking with liquid and low heat, is commonly used for meats. Martin will also illustrate this low and slow method with seasonal vegetables. The menu includes:

* fennel braised in chardonnay with pecorino

* endive and apple braised in apple cider with pancetta

* bok choy braised in miso and olive oil

* beef short ribs and pearl onions braised in red wine with bacon, shallots and thyme

* lemon cake with hibiscus ice cream

Marvin Martin is a master chef, culinary educator and olive oil expert. His previous work includes a 20-year tenure as a chef for Robert Mondavi Winery and an instructor for the annual culinary series known around the world as Great Chefs.
